
In the dessert world, you’ve got guilty (tiramisu, tres leches cake, anything with cream in it), or innocent (angel food cake, sorbet, fruit). Rarely do you find a happy middle ground (some sugar, some fat, but less sugar, less fat). Enter my Misdemeanor Blondies. They are a mere slap on the wrist, unless you eat the whole pan at once (I’m pleading the fifth).
1/2 cup light butter
1/2 cup white chocolate chips, divided
2 egg whites, room temperature
1/2 cup packed brown sugar
2 dropper’s worth of liquid vanilla stevia
1 tsp vanilla extract
pinch salt
2/3 cup all-purpose flour
Melt butter and 1/4 cup of the white chocolate chips over low heat until combined. Let cool, then add sugar, stevia, egg whites, vanilla extract and salt. Stir to combine. Add flour in two parts, and stir or whisk until completely combined. Add remained 1/4 cup of white chocolate chips.
Pour into 8 inch square pan (or whatever you have) and bake for minutes, or until a toothpick comes out clean.
Inhale, or be like me, and crumble up a piece with a Skinny Cow ice cream sandwich after you put the baby to bed. Then do your happy dance.
