Raw Snickerdoodle Cookie Dough Bites

After the holidays, I want to clean up my eating, but I also want to be comforted by my food. January is not the time for salads, in my opinion (unless the salad has roasted squash, pomegranate seeds, toasted walnuts and manchego cheese). I also still want dessert, cuz you know, I’m used to it. These wonderful little gems from The Nourishing Home are just the ticket. Perfectly sweet, satisfying, nicely balanced with protein and no sugar crash. You will see many variations on the site, but these are my favorite. Raw Snickerdoodles

Recipe from The Nourishing Home

  • 1/2 cup creamy raw almond butter (or any almond butter)
  • 1/4 cup, plus 1 tbsp raw honey (or any honey)
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 cup, plus 1 tbsp  coconut flour 
  • 3 tbsp ground golden flax seed
  • 1/4 tsp sea salt

Combine almond butter, honey, and vanilla until smooth. In a separate bowl, combine cinnamon, coconut flour, flax seed, and salt. Add wet ingredients to dry and form into a ball of deliciousness. Roll into bite-sized balls. That’s it. Store in airtight container in fridge, if they last that long. About 1580 calories for the whole batch!

Note: To make chocolate chip cookie dough version, simply omit the cinnamon, and add 1/4 cup chocolate chips.

Note: To make these more “shelf stable” (don’t have to refrigerate), bake at 325 for 8 minutes. Enjoy!
