Honey Roasted Cashews

All I have to say is thank goodness my kid can pack nuts in his school lunches. I can get him to eat an egg or some meat on occassion at home but any of that is guaranteed to not get eaten at school. Cheese? Forget it. Pb&j? nope. But these, these he will eat and yes, they’re sweet, but at least I can pronounce all of the ingredients and a little honey goes a long way.

2 cups raw cashews

1 Tablespoon grassfed butter

1 Tablespoon raw honey

1 teaspoon coconut sugar

salt to taste

Preheat oven to 350 degrees and line a cookie sheet w foil (i recommend using a thicker cookie sheet OR double up cuz nuts can burn fast). Spray foil lightly w avocado oil spray.

Melt butter and honey. Toss cashews in melted mixture and spread onto cookie sheet in a single layer for even cooking. Roast for five minutes. Stir cashews gently, checking for browning. If not yet golden brown, return to oven for another three minutes. Once you see them browning, they’re done! Remove from oven and let stand for one minute, then sprinkle w sugar and salt and try not to eat them all.
